Cheese Bread

This bread makes a perfect companion for Italian dishes.
Makes 6 servings.
Ingredients:

  • 2 cups of tapioca flour
  • 2/3 cup of Parmesan cheese (grated)
  • 1/2 cup of olive oil
  • 1/3 cup of water
  • 1/3 cup of milk
  • 2 eggs
  • 2 teaspoons of garlic (minced)
  • 1 teaspoon of salt

Directions:
Prep: Preheat the oven to 375 degrees Fahrenheit. Add the 1/2 cup of olive oil to the 1/3 cup of water and teaspoon of salt to a saucepan. Turn the heat to high and bring to a boil. Immediately remove the pan from the heat and quickly stir in the 2 cups of tapioca flour and the 2 teaspoons of mince garlic. Stir to combine and leave for about 12 minutes. Next stir in the 2/3 cup of grated Parmesan cheese. Beat the 2 eggs and stir them into the batter.

Batter will be lumpy. Divide into 6 lumps and place on a baking sheet. (do not grease the sheet) Bake for about 17 minutes until the tops of the “lumps” turn a golden brown.

Flax Bread

This bread makes a great side dish with a nice supper. It goes well with soups and stews.
Makes 1 small loaf.
Ingredients:

  • 1/2 cup of coconut flour
  • 1/2 cup of flax seeds (ground)
  • 1/4 cup of coconut oil (melted)
  • 1/8 cup of water
  • 5 eggs
  • 1 teaspoon of baking soda
  • 1 teaspoon of lemon juice
  • 1/2 teaspoon of salt

Prep: Preheat oven to 325 degrees Fahrenheit. Spray a 7.75×4.5×3 inch loaf pan with cooking spray.
Mix together the 1/2 cup of coconut flour, 1/2 cup of ground flax seeds, 1 teaspoon of baking soda and 1/2 teaspoon of salt. In a separate bowl, add the 1/4 cup of melted coconut oil and stir in the 1/8 cup of water. Beat the 5 eggs and add to the liquid along with the teaspoon of lemon juice.

Gradually add the dry ingredients into the wet and beat with an electric beater for a couple of minutes, the batter will be thick. Put the dough in the loaf pan and bake until inserted toothpick in the center comes out clean and the top is golden brown, about 40 minutes.

Pumpkin Bread

If you want to make the house smell good, bake some pumpkin bread, then eat it for dessert.
Makes 1 loaf.
Ingredients:

  • 1 cup of almond flour
  • 1/2 cup of coconut oil (melted)
  • 1/2 cup of pumpkin (pureed)
  • 1/4 cup of coconut flour
  • 1/8 cup of pumpkin seeds
  • 4 eggs
  • 3 tablespoons of pumpkin pie spice
  • 2 tablespoons of honey
  • 2 tablespoons of sugar (granulated)
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of cinnamon (ground)

Directions:
Prep: Preheat the oven to 350 degrees Fahrenheit. Spray a regular sized loaf pan with cooking spray.

Mix the dry ingredients together, 1 cup of almond flour, 1/4 cup of coconut flour, 3 tablespoons of pumpkin pie spice, 1/2 teaspoon of baking powder, 1/2 teaspoon of salt, and 1/2 teaspoon of ground cinnamon in a bowl. In a separate bowl add the eggs and beat. Mix in the 1/2 cup of melted coconut oil, 1/2 cup of pureed pumpkin, 2 tablespoons of honey, and the 2 tablespoons of granulated sugar.

Stir in the flour ingredients, mixing well. Pour the batter into the loaf pan. Spread the 1/8 cup of pumpkin seeds over the top of the batter. Bake until an inserted toothpick in the center comes out clean, start checking at half an hour (it may take an extra 15 minutes or more, depending on the oven). Allow pumpkin bread to completely cool before taking out of the loaf pan.

Sweet Pan Bread

A delicious white cake that you can top with your favorite cake topping.
Makes a 13×9 single layer.
Ingredients:

  • 3 cups of rice flour (white)
  • 2 cups of buttermilk
  • 1 cup of tapioca flour
  • 1 cup of sugar (granulated)
  • 2 eggs
  • 2 teaspoons of baking soda
  • 2 teaspoons of baking powder
  • 2 teaspoons of salt

Directions:
Prep: Preheat oven to 350 degrees Fahrenheit. Spray a 13×9 inch pan with cooking spray.

In a bowl, add the 3 cups of white rice flour, 1 cup of tapioca flour, 1 cup of granulated sugar, 2 teaspoons of baking soda, 2 teaspoons of baking powder, and 2 teaspoons of salt and mix. In a separate bowl, crack the 2 eggs and beat well. Stir in the 2 cups of buttermilk. Pour the liquid into the center of the flour mixture, stir gently, not over-stirring. Pour the batter into the prepared 13×9 pan. Bake until an inserted toothpick in the center comes out clean and the surface is golden brown, a little over an hour. Cool for about 10 minutes before serving. Store in a sealed container at room temperature.

Bread Rolls

Grain free rolls are delicious served with breakfast or a warm and tasty side with a full meal. Or enjoy a roll with butter and jam as a snack.
Makes a dozen rolls.
Ingredients:

  • 2 cups of arrowroot (heaping)
  • 1 1/2 cups of water
  • 1cup of quinoa flour
  • 1/4 cup of canola oil
  • 2 eggs
  • 2 teaspoons of cream of tartar
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt

Prep: Preheat oven to 350 degrees Fahrenheit. Spray a large baking sheet with cooking spray or use a sheet of baking paper.
Mix the 2 heaping cups of arrowroot with the 1 cup of quinoa flour, 2 teaspoons of cream of tartar, 1 teaspoon of baking soda and 1 teaspoon of salt. Add the 2 eggs, 1/4 cup of canola oil and 1 1/2 cups of water, blending well. Divide and dollop by spoon 12 “rolls” onto the baking sheet. If there is not enough room, use 2 baking sheets. Bake until tops are a golden brown, half an hour.
